This is a simplified version of the classic recipe. To add more authenticity (and work) use fresh poblano peppers. Heat them under the broiler, turning them as needed, until the skin starts to separate from the flesh of the pepper. Place in a bowl and cover with a towel until they cool. Several years ago my mother gave me a cook book that she had gotten a chapter at a time from a gas station for a fill up. The cook book has long ago disintegrated and been lost.
