Chile Relleno Casserole

This is a simplified version of the classic recipe. To add more authenticity (and work) use fresh poblano peppers. Heat them under the broiler, turning them as needed, until the skin starts to separate from the flesh of the pepper. Place in a bowl and cover with a towel until they cool. Spaetzle

Here’s the recipe I use to make spaetzle. You can sometimes find it in dried form among the noodles at a supermarket. If you don’t have a spaetzle maker you can make the dough a little thicker and put it on a cutting board and hold the board partially over the boiling water. Use a knife to push small balls of dough into the water. (more…)
